This book is a collection of healthy vegan (vegetarian recipes which don’t use any milk or milk products) dishes from around the world and from different parts of India. Every recipe has been contributed by a celebrity and every dish is delicious. Almost every dish can be made without using any oil if you so want. Every dish is nutritious and absolutely cruelty free.
Vegan diets are very popular among celebrities such as Venus Williams, Michelle Pfeiffer, Anne Hathaway, Reverend Al Sharpton, Bill Clinton and Chaka Khan. All these celebrities have credited a vegan diet for helping them lose dramatic amounts of weight and become healthier. Now the popularity of veganism has spread to outer space. NASA scientists are currently working on a vegan menu for the astronauts who will blast off to Mars on a trip planned for 2030.
The idea to put together this collection of recipes came about as a result of a true life incident……. I managed to reverse the onset of certain heart disease for me with the aid of a nutrition based vegan diet, along with light exercise. I learnt the importance of a nutrition based diet the hard way, when in January 2010 I was told that I was on the way to getting heart disease. A routine blood test had shown that I had very high levels of cholesterol and triglycerides, and I was advised immediate medication. I realised that I had to change my eating habits if I wanted to help my heart. I immediately started my fight against heart disease and impending diabetes (my sugar levels were also borderline high) by switching to a nutrition based diet. By the third month of this fitness regime, I noticed an appreciable reduction in my stomach flab. Not only did I start to feel fitter, but I was able to walk fast, comfortably, at the level required to have the desired aerobic effect. At the end of the three months, my results showed that I had brought my cholesterol, triglycerides and sugar down to within normal limits! And I had lost 7 kgs to boot!
This book shows you that there is life beyond soya. Just remember to always keep your food wholegrain, oil free, vegan and it will automatically be nutritious. Your health will improve. Your aim should be to get enough nutrients like calcium, iron, proteins, and Omega 3, from your vegan diet. Not only will the nutrition based vegan diet save your heart, it will also keep you safe from diseases like adult-onset diabetes and hypertension.
A nutrition based diet will also save you from ailments that have been linked to dietary factors, like cancers of the breast, prostate, colon, rectum, uterus, and ovaries. The book has forewords from 2 internationally renowned doctors who are very respected in India: Dr Esselstyn Caldwell Jr and Neal Barnard MD. Both doctors advocate not just a nutrition based vegan diet, but a no oil nutrition based vegan diet if you want to reverse heart disease and/or diabetes. They explain why our bodies cannot process the oil when there is either impending or already set in heart disease or diabetes. My advice to you would be to try all the recipes without oil. I did, and all of them turned out superb. Other than a very select few, all the recipes can be made without oil. Try cooking without oil – I promise you, it is very very possible and the food is very very tasty still. The book also has a foreword from India’s foremost holistic health guru, Mickey Mehta, who tells you how a vegan diet will keep you fit.
I believe that the time is right to turn vegan. We owe it to the cows, to the environment and to ourselves. And also think about it – humans are the only species on earth who drink the milk of another species.
